Crock Pot Chicken

Do you remember that time when you came home from work and the first thing you did is to look in the fridge? Most of the time what you really needed is someone who asks you how your day was, or someone who just gives you a hug.

1 whole roasting chicken (with pop-up time if possible)
4 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon thyme
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon white pepper
½ teaspoon black pepper
½ teaspoon garlic powder
1 cup onion, chopped
1 cup carrots, chopped
1 cup brown rice


Combine all the spices in a small bowl and set aside.

Clean chicken and remove any giblets. Rub spice mixture on chicken and place in plastic bag and refrigerate overnight.

When ready to cook, add onions and carrots on bottom of crock pot. Add chicken and cook on low for 4-8 hours or when timer pops up.

Cook rice as directed on package and serve with Chicken.
