Scrambled Eggs with Spinach and Avocado

EGGS, SPINACH AND AVOCADO? WHAT A BREAKFAST!

A simple and healthy breakfast! How about having it for lunch or dinner? You can’t go wrong. This version comes as low carb and made for the Ketogenic diet. If you need your carbs simply add a toast. 

It looks so delicious! I have to add this back to my breakfast routine. How about you?

INGREDIENTS

2 eggs
2 bacon, cooked
Handful spinach
Handful cheese
2 avocado slices
3 cups rockets (arugula)
1 onion sliced, optional
1 tablespoon butter

DIRECTIONS

Heat pan on medium high heat. Add butter.

Then crack to eggs, spinach, and onions into pan and scrambled.

Cook until the eggs are slightly running then transfer to plate

Add the bacon and avocado and serve.
