ToggleThese healthy and raw Almond Energy Bites are super easy to make and require no baking! A perfect pre- and post-workout snack.
INGREDIENTS
24 Balls
- 2 cups almonds (skin on)
- 1 cup soaked cashews
- 1 cup small coconut flakes and optional some extra for rolling
- 1/4 cup maple syrup, agave syrup or honey
- Pinch of Himalayan Pink Salt
Choose your flavor
LEMON
- 2 tablespoons lemon rind or 5-10 drops of lemon essential oil
- 1/4 tsp turmeric
CHOCOLATE
- 2 tablespoons raw cacao powder
- 1 tsp cinnamon
BLUEBERRY
- 3 tablespoon frozen blueberries or use 1 teaspoon of wild blueberry powder
SPIRULINA
- 1 teaspoon spirulina
DIRECTIONS
Soak the cashews for an hour.
Then put almonds and salt in a food processor and blend until the nuts are broken down.
Add all other ingredients and process until all ingredients are combined well.
Take a small amount of mixture and form a small bite size raw energy ball. If the dough doesn’t stick make your hands a bit wet before rolling. You can also add a little bit of water to the mix.
Then roll the raw energy ball immediately in the reserved coconut.
Once you’re done with all of the raw energy balls, refrigerate for a few hours or overnight and enjoy as a pre and post workout snack.
