In the need of a healthy and delicious snack? These Protein Carrot Cake Bites are super easy to make. No baking required! You just have to store them in the refrigerator.
Just take them with you while you are traveling or at work. That way you always have a healthy snack if you get hungry! Yummy!
INGREDIENTS
40 Protein Carrot Cake Balls
- 1/2 cup unsweetened coconut, shredded
- 6 dates, pitted
- ¾ cup walnuts
- ½ cup carrots, shredded
- 2 tablespoons agave
- 2 teaspoon vanilla extract
- ¼ cup plant based protein powder
- ½ teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- 1/2 cup unsweetened coconut, shredded (for rolling)
DIRECTIONS
Combine ½ cup coconut and the next 9 ingredients in a food processor. Reserve the ½ cup of coconut in a bowl for rolling. Process until all ingredients are combined well.
Take a small amount of mixture and form a small bite size ball. Then roll the ball in the reserved coconut. Place the balls on a baking sheet covered and refrigerate for a few hours or overnight. The balls are ready to eat once they are firm.
