Fried Rice is super easy to do and much better and healthier than takeout! Follow this quick vegetarian fried rice recipe to make a delicious meal.
INGREDIENTS
- 1 medium onion, peeled and roughly chopped
- 1 red bell pepper, chopped
- 1 ½ cup frozen peas and carrots, thawed
- 1 tablespoon garlic, chopped
- 3 to 4 cups cooked white rice, cooled
- 2 eggs, lightly beaten
- ¼ cup water
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and black pepper to taste
- ½ cup minced cilantro or scallions
- 3 tablespoons canola oil, or any
DIRECTIONS
Heat a wok or big pot on medium-high heat. Add 1 tablespoon of the oil then add onion, red peppers, carrots, and peas.
Stirring occasionally, cook for 2-3 minutes or until tender then move to a bowl and set aside.
Add 2 tablespoon of canola oil and brown garlic. Then add rice, breaking up clumps. When the rice is well coated, make a well in the center and break the eggs into it. Scramble eggs in middle of pot or wok then mix will with rice.
Next add the veggies and water and cook, stirring, for approximately 1 minute. Add soy sauce and sesame oil, then taste and add salt and pepper if necessary.
