Mediterranean Chicken Kabobs


We are always looking for the right diet. But forgetting our basic needs. The mediterranean food is considered by some to be one of the healthiest ways of eating in the world. It’s not just the food it’s the lifestyle too. Mediterranean diet consists of natural, whole food such as whole grains, vegetables, fruits, meat, fish, nuts, dairy and pure oils, and excludes processed and refined foods. The value is placed on relationships, pleasure, leisure, physical activity to reduce stress and contribute to physical and mental well-being. 

4 servings


2 organic chicken breasts
1 large orange bell pepper
1 large green bell pepper
1 large red bell pepper
1 large zucchini
4 small baby eggplants
2 medium red onions
2 teaspoons of lemon juice
1 tablespoon of olive oil
1 garlic clove, crushed
1 tablespoon chopped, fresh rosemary or 1 teaspoon dried
salt and pepper to taste
4 whole wheat pita bread


1. Remove seeds and cut bell peppers into even sized pieces, (not too small otherwise the peppers will slide off the skewer) cut zucchini into 1 inch slices. Cut baby eggplant in half and quarter them lengthwise. Cut onions into 6-8 even wedges each. Place all vegetables in a large bowl.

2. In a small bowl, mix together the lemon juice, olive oil, garlic, rosemary, salt and pepper, and mix well. Pour the mixture over the vegetables and stir well to coat.

3. Preheat the barbecue. Sprinkle on salt and pepper onto chicken breasts and cook on the grill for 5-10 minutes on each side or until cook. Place on a platter to cool and cut into cubes.

4. Combine all vegetables onto the skewer and cook on the grill for 2-4 minutes until slightly charred. Serve with pita bread and enjoy!
